CHAKKERA PONGALI
Sweet Rice - Delicacy Of South India
Chakkera Pongali along with 'Curd Rice'(Preparation of this recipe is described in this very category of 'Vegetarian Dishes') are very important Temple recipes of Southern Indian States of Andhra Pradesh and Tamil Nadu.

3 cups of Good Rice.
250 gms of clarified Butter (ghee).
100 gms of Greengram (without husk)
300 gms of Brown Sugar Powder,
1 cup finely sliced Coconut
Pieces of about 1 inch
each
100 gms of Cashew nuts.
100 gms of Dry Grapes.
4 cups of whole milk.
2 spoons of Cardamom powder.

 

Wash Rice and Greegram and drain water completely. Allow to dry for about 1/2 hour.

Take 4 cups of milk and 2 cups of water and boil. Add the Rice and Greengram and cook.

While the rice etc., are cooking, fry Coconut pieces, cashew nuts and dry Grapes. Add them to the cooking ingredients.

After the rice is cooked add Brown Sugar powder and mix thoroughly until the Brown Sugar dissolves completely. Now add Cardamom powder also and mix well.

Add the Ghee and mix again.

SERVE HOT.
