Ellie Mae's Baked Potato With Chili and Cheese
Side Dish
6 potatoes - baking (white, not red)
cheddar cheese (any brand)
Chili (any type)

 

First bake the potatoes. Warm up the chili. I use canned vegetarian chili but you can use any kind ya want!

Then grate a standard size brick of cheddar cheese...don't grate the whole thing...

When the taters are baked, cut them in half, put them in a baking dish and cover with warmed chili. Keep the taters close together and top the taters and chili with grated cheese, as much as you see fit. Of course some guests may prefer no cheese!
It's that simple. Enjoy!!!

This can be a wonderful warm dinner in the winter. If you live alone, of course, just use one or two potatoes.
