Hash Brown Pie
Great for Breakfast, Side Dish, or Vegetarians!
1 box hashbrowns
1 Tbls. butter
3/4 cup water
3 eggs
2 cups cheddar cheese
2 cups cojack cheese
1 green pepper, chopped
1 red pepper, chopped
1 small onion, chopped
2 medium zuccini, chopped
8 oz. fresh mushrooms

 

Preheat oven to 325 degrees F.

Mix hashbrowns, water, 1 egg, and 1/2 cup of each cheese in a bowl. Place in pie tin. Bake covered for 15 minutes.

Saute veggies in butter for 10 minutes. Then mix in bowl with 2 eggs and 1 cup of each cheese.

Place veggie mixture on top of crust. Sprinkle remaining cheese on top. Bake covered for 20 minutes.
