1 Can of Chickpeas (or Garbanzo Beans) 1 Lemon Cumin Bagged Spinach Cucumber Purple Onion Whole Grain Bread Garlic Salt and Pepper

Drain the beans. Reserve the liquid. Add the beans, juice of one lemon, cumin and garlic (to taste) to a food processor. Blend and use reserved bean juice as needed. Should be the consistency of peanut butter. Spread the bean mixture on 2 pieces of bread. Salt and Pepper each side. Put Spinach on each piece. Put sliced cucumber on each piece. Add a little red onion. Carefully put both sides together and cut into 4 pieces. If you layer and cut the sandwich as suggested, the sandwich will stay together and the cucumbers will not touch the bread (possible soggy factor.)
