Ivy Gourd belongs to the Cucurbita group. Also known as Tindora, Monali, Kavakkai, Dondakaya, and Little Gourd .. Ivy gourd is a rich source of micro nutrients, vitamin A, and vitamin C. Because of its capacity to regulate blood glucose, Ivy gourd is preferred by the Diabetics. Native of Indonesia, Thailand and India, Ivy gourd is also cultivated in other parts of the world like South East Asian countries, Hawaii and the US. ----------
500 grams of tender Ivy gourds. 200 grams of Refined oil. 4 Green chillies- chopped. 1 spoon mustard seeds. 1 spoon turmeric powder. Few Curry leaves. 1 spoon red chilly powder. Salt to taste.

Wash the Ivy gourds, wipe them to remove water and cut into round slices or into long shreds.
Pour oil in a frying pan and heat. Splutter mustard seeds. Add the green chillies and curry leaves. Saute for a couple of minutes. Add the Ivy gourd pieces, red chilly powder and turmeric powder. Fry again and finally add salt to taste. Keep on frying on low flame until the dish turns dark brown.
SERVE HOT WITH ANY NON SWEET ITEM.
