Nicky's Spicy Spinach Spaghetti

1 cup white or yellow onion finely chopped 2 cups sour cream 1 cup finely chopped spinach 2 Tbls. minced garlic 3 cups shredded Monterey pepper jack cheese 1 cup shredded mozzarella 1 cup heavy whipping cream cayenne pepper, to taste salt and pepper, to taste 1 egg, beaten 1 box thin spaghetti or fettuccini 3-4 pats of butter/ or 1/2 cup extra virgin olive oil

Prepare spaghetti according to directions. Preheat oven to 375 degrees F.
Mix together sour cream, whipping cream, egg, salt, pepper, cayenne and garlic until smooth. Blend in onions, 3 cups of pepper jack cheese, garlic, spinach.
Mix in with drained spaghetti. Put into oven-safe baking dish, preferably glass. Add pats of butter on top of spaghetti/ cheese mixture, or drizzle with olive oi.
Sprinkle the cup of mozzarella to cover the top.
Bake in oven until cheese is bubbly about 15-20 minutes.
Variations: instead of using spinach, chopped green and red peppers work just as well.
Serve up with garlic bread. Enjoy!
