							| Nicky's Spicy Spinach Spaghetti

							| 1 cup white or yellow onion finely chopped 2 cups sour cream
 1 cup finely chopped spinach
 2 Tbls. minced garlic
 3 cups shredded Monterey pepper jack cheese
 1 cup shredded mozzarella
 1 cup heavy whipping cream
 cayenne pepper, to taste
 salt and pepper, to taste
 1 egg, beaten
 1 box thin spaghetti or fettuccini
 3-4 pats of butter/ or 1/2 cup extra virgin olive oil

							| Prepare spaghetti according to directions.
 
 Preheat oven to 375 degrees F.
 
 Mix together sour cream, whipping cream, egg, salt, pepper, cayenne and garlic until smooth. Blend in onions, 3 cups of pepper jack cheese, garlic, spinach.
 
 Mix in with drained spaghetti.  Put into oven-safe baking dish, preferably glass. Add pats of butter on top of spaghetti/ cheese mixture, or drizzle with olive oi.
 
 Sprinkle the cup of mozzarella to cover the top.
 
 Bake in oven until cheese is bubbly about 15-20 minutes.
 
 Variations: instead of using spinach, chopped green and red peppers work just as well.
 
 Serve up with garlic bread. Enjoy!
