POTATO CURRY A Potato Preparation - Indian way |

500 grams Potatoes. 200 grams Refined oil. 150 grams Tomatoes - Cut into pieces. 2 Onions - Cut into pieces. 4 Lengthwise split Green Chillies. 1 spoon Mustered seeds. 2 spoons Red Chilly powder. 1 spoon Turmeric powder. Few Curry leaves. Salt to Taste.

Wash and boil the Potatoes. Peel and cut into medium size pieces.
Add oil to a pan, heat and add Onion pieces, Green chillies, mustered seeds and finally the Curry leaves. Saute well until onions turn brown. Add The Potato pieces and turmeric powder and fry for 5 minutes. Add red chilly powder and enough salt and mix well. Add tomato pieces and little water. Mix and allow to simmer on low flame for about 10 minutes.
Good with Pancakes and Rice.
