Shepherd's Pie Meat Alternative Dish |

4 russet potatoes, diced 1/2 - 1 cup soymilk 1/2 tsp. salt 1/2 cup vegetable broth 2 onions, chopped 1 large green bell pepper, diced 2 carrots, sliced 2 celery stalks, sliced 1 15oz. can no salt added diced tomatoes 1 15oz. can red kidney beans, rinsed and drained 1/2 tsp. paprika 1/2 tsp. black pepper 1 Tbls. low sodium soy sauce

Preheat oven to 350 degrees.
Dice potatoes and steam until tender. Mash, adding enough soymilk to make them smooth and spreadable. Add salt. Set aside.
In a large pot, heat vegetable broth and cook onions for 3 minutes. Add green pepper, carrots, and celery and cook for 12 minutes, stirring occasionally. Add tomatoes, beans, paprika, pepper and soy sauce, then cover and cook for 10-15 minutes.
Put vegetables into 9x13 pan and spread mashed potatoes evenly over the top. Sprinkle with paprika. Bake for 25 minutes.
