Sorrel Chutney Spicy Sorrel Chutney |

3 Cups of fresh Sorrel leaves 150 Grams of Refined Oil 50 Grams fresh Green Chillies 3 Red Chillies 10 Garlic bulbs 1 inch Ginger piece 2 Spoons of Mustard seeds 1 Spoon of turmeric powder 1 Small Bundle of Curry leaves Salt to Taste

Thoroughly clean the sorrel leaves. Chop the green chillies into small pieces. Slightly mash the garlics with the blunt edge of knife. Chop the ginger. Set them all aside.
Add oil to a deep bottomed pan and heat. Add mustard seeds, green chillies, whole red chillies, ginger pieces and the garlic bulbs. Saute for some time. Remove the fried red chillies and the garlics and keep them separately. Now add the sorrel leaves to the pan and fry until the sorrel leaves become tender and turn brown in color.
Transfer all the ingredients from the pan into a jar, add salt and turmeric powder and pulverize in to some what rough paste. Add fried red chillies and the garlics to the paste.
Fry separately some curry leaves and add to the finished product. Stir well.
Serve with hot rice or pancakes!
