Stuffed Green Peppers in Olive Oil Turkish Recipe! |

10-12 green peppers (suitable for stuffing) 1/4 cup olive oil 1 cup water
Rice Stuffing Mix- 3/4 uncooked rice 7 medium onions, chopped 2 small tomatoes, peeled and chopped 3/4 cup olive oil 2 Tbls. currants 2 Tbls. pine nuts 1/2 bunch mint, fresh or 1 tsp. dried 1 fresh bunch dill or 2 tsp. dried dill weed 1 tsp. salt 1/2 tsp. all spice 1/2 cup water 1 tsp. black pepper

Allow the rice to stand in hot water until the water cools. Then drain the rice and wash it several times and drain. Saute the chopped onions, 2 Tbls. pine nuts, and 1 tsp. salt in 3/4 cup olive oil until the color of the onions changes. Add the rice and saute for 10 more minutes. Add 1/2 cup water, chopped tomatoes, currants, black pepper, allspice, mint, and dill. Cover and cook for 15 minutes. Remove from heat. Cut off the tops of the peppers and remove all seeds. Stuff the peppers loosely with rice mixture. Replace the lids and arrange in a pan, the lids facing up. Add 1 cup water, 1/4 cup olive oil, and salt. Cook for about 45-50 minutes. Remove from heat and allow to cool in pan. When cool, remove from pan and arrange on serving platter and serve. Serve cold.
