TAMARIND RICE
Preparation of Rice using Tamarind
3 Cups of good Rice.
100 gms of dry seedless Tamarind.
1 pinch of Asafoetida.
6 Red Chillies.
6 Chopped Green Chillies.
1 spoon of Bengalgram.
2 spoons of Musrered seeds.
Salt to taste.
100 gms of Cashew nuts.
1 bunch of Curry leaves.
200 gms of Refined Oil.
3 spoons of Turmeric powder.

 

First add warm water to Tamarind and allow to soak for about ten minutes.
Extract thick juice from it and keep aside.

Wash the Rice and adding six cups of water, pressure cook it for about 15 minutes. Place the cooked rice in a wide plate, add 2 spoons of oil and mix, so that the rice particles do not stick to each other. Now add turmeric powder and chopped Green Chillies. Mix again. The rice turns yellow.

Take a frying pan, add oil and heat. To this add Red Chillies, Mustered seeds, Asafoetida, Bengalgram, Cashew nuts and finally the Curry leaves and fry.

Add all these ingredients and salt to the cooked yellow Rice and mix well.

Finally add Tamarind juice slowly and care should be taken not to add excess of Tamarind.

SERVE HOT.
