Veg Jalfarezi Mixed Vegetables in Thick Curry |

4 Potatoes, peeled and cut lengthwise to 8 halves 2 capsicum 1 onion 1 carrot, sliced 2 tomatoes, cut in halves 1/4 tsp. chilli powder 1/2 tsp. turmeric powder 2 tsp. ginger-garlic paste salt, to taste 8 cashewnuts, ground 4 inch piece coconut, ground 1/4 cup milk 8 tsp. oil

Brush the pieces of potaoes, capsicum, carrot, tomatoes and slices of onion with oil and place them in a griller for 20 minutes. Leave potatoes and carrots in the griller till they turn brown.
In a pan put some oil add onion, then add ginger garlic paste, chilli powder, turmeric powder and salt. Fry for 2 minutes then add tomatoes and mash them in pan. Cook till oil seperates, now add cashew and coconut paste, add grilled vegetables, add milk, simmer and leave for 7 minutes.
Serve with hot naan or chapati!
