Vegetable Porridge Versatile, naturally sweet and rich in vitamins |

2 Sweet Potatoes 1/2 of a Butternut Squash 100g of Dates or Prunes (stoneless) 1/2 a large white Onion 1 Red Pepper 100g of Porridge Oats Ground Cinnamon Nutmeg Ginger Salt Pepper

Peel and dice the sweet potatoes and butternut squash
Add the dates/prunes, sweet potatoes and butternut squash to a large pan
Add just enough boiling water to the pan to completely submerge the ingredients
Simmer for 20 minutes
Dice the onion and red pepper
Mash the sweet potatoes, butternut squash and dates until an even consistency is achieved (no need to drain water)
Add the red pepper, onion, porridge oats and seasoning to the pan
Simmer for a few more minutes, stirring occasionally
Leave to stand for a few minutes before serving. Can be enjoyed hot or cold.
