Vegetarian Pepper Steak

• 8 oz Beef Flavored Un-Steak Slices from ND Labs • 1 cup sliced mushrooms • 2 bell peppers - sliced • 1 medium onion, chopped • 1 garlic clove, smashed, peeled and chopped in half • 1 14-ounce can baby corn - drained • 1/4 cup light soy sauce • 3/4 cup beef broth • 1 tablespoon cornstarch • 1 1/2 tablespoons water • 2 tablespoons oil or margarine for frying • 1 cup stewed tomatoes • Salt and pepper to taste

Directions: In Advance: Hydrate the Un-Steak Beef Flavored Slices by simmering in 8 oz of water, until all of the water is absorbed (~15 minutes).
1. In a bowl, combine soy sauce, corn starch and vegetarian beef broth. Set aside. 2. In a large skillet or Dutch oven, heat 2 tablespoons oil or margarine on medium high heat. Brown the Un-Steak Beef Slices, turning over once. 3. Move steak slices to one side of the pan then add the onion and garlic to the frying pan. 4. Add the mushrooms, peppers and the baby corn. Cook for 5 minutes. 5. Add the soy sauce and beef broth. Bring to a boil, then reduce the heat, cover and simmer until the vegetables are tender (5 - 8 minutes). 6. Add the stewed tomatoes. Cover and cook for another 5 - 10 minutes. Cook while stirring constantly for 4 - 5 minutes until thick and bubbling. Serve over cooked rice. www.ndlabs.com
