Zucchini Quiche side dish |

3 cups zucchini squash (washed, unpeeled, sliced into thin rings 1 cup Bisquick 1/2 cup grated romano cheese 1/2 cup diced onion 1/2 cup olive oil 2 cloves garlic - minced 2 Tbls. fresh flat parsley, chopped 4 eggs - well beaten 1/2 tsp. oregano dash of basil 1/2 tsp. salt dash pepper

Mix all ingredients well with a large wooden spoon.
Pour into 8 or 9 inch pie plate. (Aluminum throw-away with straight sides is perfect. They are sold with plastic snap on lids) Spray pan with Pam, Mazola or other cooking spray before pouring mixture into pan. Bake for 45 minutes at 350 degrees F.
Cool on wire rack - then put on cover and keep refrigerated.
This is a great recipe to bring to a barbecue or whatever.
It may be eaten hot or cold. Most people like it cold.
Many who do not like vegetables have told me they love this!
