 Post subject: Working Mom - Quick and Healthy Dinners?

Hi Everyone,

I constantly search the Internet for new recipes to try and came across this site....Fantastic!...One of the best I've ever seen and easier to use then the Food Network....:)

Anyway, I'm a working mom with 4 kids...Dinner time is special for us because we're so busy, it's the one time that we can really sit down and talk. My dilemma? Is finding some really easy but nutritional recipes...not boring and hopefully not out of a can that I can or we can whip up together that won't take up a lot of our time....

Any suggestions????

Welcome to NetCooks! It does appear that winter is on the way! We're glad to have you on board and hope you'll share some of your favorites with the rest of the world!

As for recipes.. one of my kids' all-time favorites is the Spaghetti-Pizza Style.. two of their favorites combined into one! And trust me I love easy too! Its posted in the casseroles section of our site!

Glad to have ya aboard. One dish that has served my family well is the occasional "bean dip'". We tend to have this when we want to spend less time in the kitchen and more time being with each other (as opposed to the times we want to spend more time in the kitchen and less time with each other ;-)).

There are two such recipes here and now. All you need do is 'find a recipe' and search on 'bean dip'. Ours is somewhat different than those presently available so I'll put it up the next day or so. Y'all enjoy.

YOU WANT SOMETHING REALLY FAST AND EASY,JUST TRY THIS.
FOR A FAMILY OF FOUR YOU WILL NEED THE FOLLOWING:
2/3 CUP GOOD OLIVE OIL
7-8 CLOVES OF GARLIC THICKLY SLICED
PASTA OF YOUR CHOICE
FRESH ITALIAN PARSLEY CHOPPED
FRESHLY GROUND BLACK PEPPER

HEAT YOUR OIL ON MEDIUM HEAT,ADD GARLIC AND COOK UNTIL LIGHTLY GOLDEN
COOK YOUR PASTA TO TASTE AND DRAIN AND PUT BACK IN THE POT
TAKE ALL OF THE OIL AND GARLIC AND ADD TO THE PASTA AND TOSS WELL
MIX IN THE PARSLEY AND GRIND PEPPER OVER IT AND VOILA!!! SUPPER.
SERVE WITH GARLIC BREAD AND A SALAD
EASY AND TASTES GREAT

Pasta is definitely the way to go when in a hurry. When my grandchildren visit and we need something quick I put lean chopped bacon in the bottom of a saucepan with a splash of olive oil, add some garlic and chopped onion and a can of chopped or peeled tomatoes. (A large can or two small ones.)While this simmers, cook your spirali or fettucine. Drain pasta, add chopped parsley to sauce, taste for seasoning and serve over pasta .Sprinkle with grated cheese of your family's choice.

Thank you all for your recipes...I will be trying a few this weekend in fact.

What a great website!

As we all know a working mom needs to be quick sometimes in the kitchen, but these recipes leave me with plenty of time to spare.

My kids like chicken wings too...and favourites out there that are also easy to do and can be done in bulk. My husband and I like to entertain and would like to host a themed mexican party. Any ideas?

Have you tried a slow cooker? It takes a little extra time the evening or morning before, but dinner is ready when you get home. I have even done a "roast" chicken in my slow cooker. Chicken wings also can be done in large quantities in a slow cooker. If you are interested I'll look through my recipes.

Other than that, I have found that either an entree with a simple salad or 'one pot' meals are pretty quick (and less clean-up). My favorite is a rice dish that I make up differently each time out of my head...

basically
1 lb. ground turkey or lean beef, onion and garlic - brown in skillet, add 16 oz. frozen vegatables of choice, 2 cups water or broth and 1 cup rice, cover and simmer until rice is cooked, adding water if necessary. Season with what ever you prefer. The rice takes a little time, but at least you aren't fussing over a bunch of pots on the stove while it cooks. (or use the directions for water and rice amounts from a box of quick rice) Sometimes I add tomatoes. Of course with four kids this may not be enough.

I'll change it around by using cubed chicken or pork, adding salsa or sweet and sour sauce, or eliminating the rice and serving with pasta.

I posted something about using left-over BBQ for quick, hot bagel sandwiches on a thread here somewhere - I'll look it up, as it would work with any left over meat or even sliced Deli meat.

Oh - and don't forget a pinata for your party if there are kids, it can be filled with all sorts of treats besides candy - if it is an adults only party, that could be fun too.

hi this is Big Jim,
I have a recipe for you that takes an hour and fifteen minutes an is so easy.
Jim`s country style pork ribs
6 country style pork ribs
1 46oz can pineapple juice
1 lg, bottle bbq sauce
now this is where it gets easy.
1. trim off any excess recipes
2. put ribs in a large stock pot with juice and boil for 1 hour
3. drain off juice, baste with bbq sauce on one side
4. place ribs on a cookie sheet and put under the broiler for 2 1/2 minutes.
5. take them out and do the other side the same way.
6.take out of oven and baste a third time and then let rest for 5 minutes.
7. they are now ready to serve. I usually serve a potato salad with them.
enjoy. they will be so tender you will have to use a spatulla to pick them up.

Thank you again for all the fantastic ideas...and hey Big Jim....I'm thinking I'm gonna try those ribs...they sound tasty!

this is a recipe that took me about ten minutes to think up, and it is so easy.
Jim`s Pineapple cheese pie
1 9 inch pie crust ready to eat
1 20oz can crushed pineapple
2 reg. size tubs cool whip
1 large box pineapple jell-o gelatin
1 reg. size cream cheese
directions:
1. drain juice from crushed pineapple, set fruit aside.
2. dissolve jell-o in pineapple juice and microwave for 2 minutes. let cool.
3. mix cream cheese, 1 tub of cool whip and the pineapple fruit.
4. mix jell-o mixture in with the cream cheese mixture.
5. pour into the pie crust, and refrigerate for 4-5 hours.
6. when ready to serve, add a dollup of cool whip from the other tub.
7 this recipe can be used as a dessert without the pie crust, just put it into pudding
bowls. enjoy.....
