In the recipe for Roast Chicken Provencal one of the ingredients is 'zested' lemon. I gather zesting is a process, but what the heck is it? :?

Yo, bro! To zest a lemon, just use a "fine" grater and gently grate the yellow off of the outer layer. Be sure not to get the white underneath, as it's bitter. Good luck. e
