Come on Swede... Its not a Swedish Christmas unless the Lutefisk hits the table. Or should I say melts through the table... :D

Well Flash its quite cold now and if I may say so myself, Its time for some Swedish food to warm up the heart. Lets start with some Gravlax.
Merry Christmas.

It's positively stifling here and now (110 degF heat index) and we're lucky if we can stand to get close to the grill. Right now I'm thinking about some cocktail crab claws, butter dipped. Maybe follow that with a garden salad and then a grilled chicken rendition of some description. Got any recommendations there?

Recently had a Chicken Marsala that was pretty good but it lacked the prosciutto presence that was expected. Others tried the Chicken Ralph (who named it that?) which is grilled chicken with a bit of melted goat cheese and grilled peppers on top, sauced with a light white sauce. Participators raved about it... There was the obligatory bread and olive oil/seasons dip as part of the 'befores'. The whole thing was really quite good.

Here is a link I found with all the information you would need on Lutefisk. http://www.dlc.fi/~marianna/gourmet/lutfisk.htm

Now all we need is a good Lutefisk recipe!
